- Develop, create and approve new menus base don concept, season, market trend and target market together with head of management
- Responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines while maximizing stocks, ordering and inventory
- Control and direct the food preparation process on a daily basis, working with each Sr chef per section to ensure the quality of output from the highlights of the menu to the special VIP Guests requests
- Manage P&L and forecasts for the restaurant together with top management
