Job Description
How does your working day look like …
- You'll be following all the food policies and procedures in the kitchen.
- You'll be recognizing good quality products and presentations.
- You'll be maintaining high sanitation standards throughout the kitchen and working stations.
- You'll be checking and maintaining all service standards established for the kitchen.
- You'll know of requisition point and par stock level for kitchen supplies.
- You'll constantly strive for new innovative ideas in the menu and new concepts of production and presentation.
- You'll know and understands all the kitchen policies and procedures in food production.
- You'll be supervising subordinate activities to minimize wastage and costs and minimize the possibilities of accidents and cross contaminations.
- You'll be assisting in sufficient preparations for the elaboration of the whole menu according to recipe manuals.
- You'll be attending meetings and training sessions organized by the Hotel management for the position.
- You'll be directing the subordinate kitchen brigade in maximising all resources to achieve high quality and excellent all over cost control.
- You'll be maintaining good morale and co-operation within the team.
- You'll be ensuring that subordinates personal hygiene is always up to the highest standard.
- You'll assist in the preparation and conducting and supervising training for Commis.
- You'll be coaching and counselling Commis effectively with their daily tasks.
- You'll be communicating effectively with subordinates, immediate superiors and other department heads.
- You'll be capable of expressing clearly, listening, and absorbing information.
- You'll deputise in the absence of the Chef de Partie.
- You'll work in a safe manner in accordance with HACCP regulations.
Management
- You'll follow the technical guidelines and preparation processes for the letter, avoiding all wastage.
- You'll be assisting in managing inventories and orders for food products, adapting stocks to variations in consumption.
- You'll be assisting in managing kitchen appliances.
- You'll manage time effectively, by meeting deadlines on time.
- You'll coach and counsel Commis effectively.
- You'll be attending daily briefings and keeping communication transparent.
Desired candidate profile
- You'll ensure that the workplace and storage areas remain clean and tidy, and the safety of consumable goods by always respecting HACCP regulations.
- You'll respect the instructions and safety guidelines for the equipment used.
- You'll apply the hotel's safety regulations (in case of fire etc.).
- You'll respect the hotel's commitments to the "Planet 21" sustainability program (saving energy, recycling, sorting waste etc.).
Qualifications
Your personality counts more than your CV …
- Vocational diploma in food & beverage and/or any initial training.
- Previous experience as a Demi Chef De Partie in a hotel or restaurant, and can speak English fluently.
- You can inspire your fellow staff just as you can inspire your guests.
- You’re passionate about good food, and enjoy discovering new concepts.
- Flexibility to work mornings, evenings, weekends, and holidays as required.
- Food handler's certification or willingness to obtain one.
- You’re a doer – and even if you do it wrong sometimes, you openly admit it.
- You’re not just bringing your abilities, but also your character.
