Roles and responsibilities
The Commis I - Bakery is responsible for assisting in the preparation, production, and presentation of high-quality baked goods, desserts, and pastries. Working under the guidance of the Pastry Chef or Sous Chef, the Commis I ensures adherence to established standards and practices, contributing to the overall success of the bakery and culinary operations.
- Prepare a variety of baked goods such as breads, pastries, cakes, and desserts according to prescribed recipes and presentation standards.
- Ensure accurate portioning and proper use of ingredients.
- Maintain high standards of hygiene, cleanliness, and food safety throughout the baking process.
- Inspect finished products to ensure they meet quality, taste, and presentation requirements.
- Assist in the setup and breakdown of the bakery workstation.
- Collaborate with the Pastry Chef and kitchen team to meet daily production schedules.
- Monitor inventory and assist in stocking ingredients, ensuring minimal waste.
- Follow all kitchen policies, procedures, and safety guidelines.
Qualifications
- Proven experience in bakery operations, preferably in a luxury hotel or fine dining environment.
- Strong understanding of baking techniques, ingredients, and equipment.
- Excellent attention to detail and commitment to quality.
- Ability to work under pressure and meet tight deadlines.
- Basic knowledge of food safety and sanitation practices.

Assist with Inventory and Stock Management

- Help with the receipt of deliveries, check for quality and freshness of ingredients, and store them appropriately.
- Report any shortages or items that need to be replenished to the supervisor.

Setting Up and Preparing Ingredients
- Prepare and measure ingredients needed for the baking process, such as flour, sugar, eggs, and other items.
- Set up baking stations and prepare baking pans, trays, and other equipment required for production.
- Follow the chef’s instructions to help with the production process, such as dividing dough, shaping bread, or filling pastries.

Assisting with Product Presentation
- Assist in the decoration and presentation of baked goods, such as icing cakes, glazing pastries, or placing finishing touches on products.
- Ensure products are visually appealing and meet the required standards for service.

Quality Control and Consistency
- Ensure that all baked goods meet the required standards for taste, texture, and appearance.
- Monitor the oven and baking process to ensure products are baked to perfection, adjusting temperatures and times as needed.

Assisting with Special Orders
- Help with the preparation of special orders, custom cakes, or themed pastries for events, catering, or large orders.
- Work closely with senior bakers to accommodate special requests or adjust recipes to meet customer preferences.

- Learn different baking techniques and refine baking skills under the guidance of senior chefs.
- Observe and assist in the preparation of complex pastries or more intricate recipes to expand your baking knowledge.
