Job Description

Roles and responsibilities

As Demi Chef de Partie you will carry out and partially supervise operational tasks and duties in the kitchen under the guidance of the respective Senior Chefs, with the overall objective to prepare food in a timely manner as per quality and food safety standard.

Key Responsibilities

  • Assist the Chef de Partie in preparing and cooking dishes to the highest standards.
  • Ensure all ingredients are prepared and presented according to recipes and kitchen standards.
  • Maintain a clean, organized, and safe working environment.
  • Work efficiently under pressure while ensuring quality and consistency.
  • Monitor and manage inventory for your section, assisting with orders as needed.
  • Follow all health, safety, and hygiene regulations.
  • Contribute to the creation of new dishes, sharing ideas and feedback.
  • Support the kitchen team with other tasks as required
  • Oversee and follow through the food safety standards set by Mandarin Oriental Hotel Group, Safe & Sound and through the UAE Municipality rules and regulation.

Qualifications And Requirements

  • High School qualification or equivalent.
  • Degree or Higher National Diploma in Hospitality/Culinary arts is preferred.
  • Experience as a Demi Chef de Partie in a high-volume hotel or free-standing restaurant with the highest levels of service preferred.
  • A minimum 2 years’ experience working in a 5-star or free-standing restaurant.
  • Verbal and written communication skills in English.
  • Verbal and written communication skills in Arabic or other languages are preferred.
  • Hotel pre-opening or renovation experience is preferred.
  • Solid Knowledge in preparing, cooking, presenting dishes.
  • Strong knowledge of HACCP.

  • Attention to Detail:

    • Baking and pastry work requires precision and attention to detail, particularly when following recipes, ensuring consistent portion sizes, and achieving high-quality presentation.
  • Basic Baking Knowledge:

    • While this is an entry-level role, some basic knowledge of baking methods, pastry types, and techniques (e.g., mixing, folding, or glazing) is helpful. Enthusiasm to learn more is equally important.
  • Creativity:

    • Creativity is key for decorating pastries, cakes, and other baked goods in a visually appealing manner. A good eye for design and an interest in experimenting with new flavors and techniques are beneficial.
  • Physical Stamina:

    • Baking can be physically demanding, especially in a busy kitchen. The ability to stand for long periods, lift heavy items, and work efficiently is important.
  • Time Management:

    • The ability to manage multiple tasks at once, prioritize duties, and work within a set schedule is crucial for success in the fast-paced kitchen environment.
  • Teamwork and Communication Skills:

    • Good communication skills are essential when working with other kitchen staff and pastry chefs. Being able to work collaboratively in a team environment is a key part of the role.
  • Knowledge of Food Safety and Hygiene:

    • A basic understanding of food safety regulations, including the handling and storage of ingredients, is essential. Adhering to health and safety standards in the kitchen is critical.
  • Willingness to Learn:

    • As an entry-level position, a Commis - Pastry & Bakery must be eager to learn from experienced chefs, accept constructive criticism, and continuously develop skills in the craft of baking and pastry making.
