What you will be doing:
- Responsible for All meat and fish on delivery are inspected for quality and quantity.
- In responsible of maintaining the cleanliness of the meat and fish processing facilities as well as the correct storage of all meat and fish goods in the freezers and refrigerators.
- The Butcher must be completely aware of the companys controlling and food preparation protocols such as portion control which are specified in the F&B manual.
- All food items should be properly measured and portioned. Conforms to all portion sizes quality requirements department regulations policies and procedures.
- Assist the Sous Chefs with menu planning and ensuring that enough supplies are available for the projected service.
- Plan prepare and execute highquality culinary options for a variety of conferences and events.
Ensure strict stock rotation and minimum wastage. Have stock control procedures implemented and maintained. - Keep all working areas clean and tidy & ensuring all equipment is maintained serviced and cleaned to WHS standards.
Qualifications :
Your experience and skills include:
- With at least 12 years relevant work experience in a hotel
- Ability to work well under pressure in a fast paced environment
- Ability to work cohesively and collectively as part of a team
