Swisstel Al Murooj United Arab Emirates is seeking a highly skilled and experienced Head Butcher to lead our meat preparation operations. The ideal candidate will combine expert butchery skills with strong leadership abilities to ensure the highest quality standards in our culinary offerings.
- Oversee all meat preparation and butchery operations ensuring consistency and quality across all products
- Manage inventory and ordering of meat supplies optimizing costefficiency without compromising quality
- Train supervise and mentor the butchery team fostering a culture of excellence and continuous improvement
- Collaborate closely with chefs to meet menu requirements and contribute to menu development
- Implement and maintain rigorous food safety and sanitation standards in the butchery department
- Develop innovative meat products and preparation techniques to enhance our culinary offerings
- Ensure all meat cuts and preparations meet the hotels highquality standards and guest expectations
- Stay updated on industry trends and best practices in butchery and meat preparation
Qualifications :
- Minimum 2 years of experience as a butcher with at least 2 years in a leadership role
- Culinary degree or equivalent professional training in butchery
- Current food safety certification (e.g. HACCP)
- Expert knife skills and indepth knowledge of various meat cuts and preparation techniques
- Proven experience in inventory management and cost control
- Strong leadership and team management skills
- Excellent understanding of food safety and sanitation practices
- Indepth knowledge of different meat types quality standards and international cuisine
- Ability to work efficiently in a fastpaced environment while maintaining attention to detail
- Excellent communication skills and ability to work collaboratively with diverse teams
- Proficiency in English; knowledge of Arabic is a plus
