Roles and responsibilities
As a Stewarding Supervisor you will be responsible in all aspects of managing cleanliness, hygienic and safe environment of the back of house of food and beverage area. Ensuring the quality of the cleanliness, hygiene and sanitation in accordance’s to local UAE rules and regulation in addition to Mandarin Oriental Hotel Group standard.
Key Responsibilities
- Supervise and support the stewarding team, ensuring efficient and effective kitchen cleaning and organization.
- Oversee the cleaning, sanitation, and maintenance of all kitchen areas, equipment, and utensils.
- Develop and enforce cleaning schedules and checklists to meet health and safety regulations.
- Train, mentor, and motivate stewarding staff to uphold company standards and improve performance.
- Ensure waste disposal and recycling practices are followed.
- Coordinate with chefs and other kitchen staff to maintain seamless operations.
- Monitor inventory levels of cleaning supplies and communicate with the procurement team for stock replenishment.
- Assist with administrative tasks, including performance evaluations, shift scheduling, and reporting.
- Oversee and follow through the food safety standards set by Mandarin Oriental Hotel Group, Safe & Sound and through the UAE Municipality rules and regulation.

- Team Management: Oversee a team of stewards or dishwashers to ensure that all kitchen and dining area cleaning tasks are completed efficiently and according to health and safety standards.
- Training and Development: Provide training to new stewards on the proper use of kitchen equipment, cleaning procedures, and safety protocols. Continuously monitor staff performance and provide ongoing coaching and feedback.
- Scheduling and Shift Management: Create work schedules for stewards to ensure the kitchen and dining areas are continuously maintained throughout operating hours, particularly during peak meal periods.
- Motivation and Performance Monitoring: Ensure that the team is motivated, productive, and adheres to service standards. Address any performance issues promptly and effectively.
Desired candidate profile
Qualifications And Requirements
- High School qualification or equivalent.
- Degree or Higher National Diploma in Hospitality/Hotel/Business Management is preferred.
- A minimum 2 years’ experience as Supervisor Steward or 4 years of experience as Steward in a high end five-star luxury hotel.
- Work experience in at least one of the following countries in the Middle East: UAE, Bahrain, Saudi Arabia and Qatar is preferred.
- Certified essential food safety in catering or Serve Safe certificated is preferred
- Knowledgeable about proper handling of Dishwashing Machines and Chemicals.
- Strong knowledge of Food Safety is essential
