Job Description
- Designing exemplary dining experiences with precision and skill with a focus on large-scale banquets for The Royal Family.
- Prepares and develops menus, recipe costing, training of dishes.
- To check on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.
- Supporting Executive Chef in running a kitchen operation of 75 chefs.
- Assists with training and development.
- Communicate with Chefs for smooth running of the front and back of the house.
- Monitor kitchen preventive equipment list. Manage culinary equipment list.
- Maintain a high level of service by constantly training and coaching all direct reports and talent. Daily training plan in place followed by the monthly training plan.
- Inspect and oversee the cleanliness and maintenance of all function spaces, public areas, and service areas.
- Responsible for weekly, monthly schedule and payroll for the outlet.
