Job Description

- Overseeing the culinary processes of the pastry section and ensuring that everything is up to standard including food, manning and HACCP.
- Assisting the Executive Chef and Chef de Cuisines, communicating and delegating the production schedule for the day, collating quantities to be produced from the forecast and for the next day’s operation.
- Coordinating with the Executive Chef and Catering department any special functions regarding food preparation and presentation.
- Ensuring that HACCP and other local regulations are adhered to.
- Liaising with Purchasing to ensure prompt and efficient purchasing, food quality, issuing of supplies, stock and inventory control.
- Liaising with Stewarding to ensure an adequate supply of equipment and to ensure kitchen cleanliness and hygiene meet the required standards.
- Liaising with Engineering to ensure prompt and efficient repair and maintenance.
- Liaising with Outlet Managers to monitor food quality, plan "specials" and discuss operational problems.
- Making recommendations to Management for modernizat
