Responsibilities
- Prepare and portion a variety of meats including beef pork poultry and game according to the restaurants specifications and high standards.
- Collaborate with the executive chef and culinary team to develop meat-based dishes and contribute to the overall menu strategy.
- Oversee the daily butchery operations ensuring efficient workflows and maintaining high standards of cleanliness and safety.
- Manage inventory levels of meats and supplies placing orders as necessary while monitoring quality and freshness.
- Stay updated on industry trends and innovation in butchery practices ensuring adherence to best practices.
- Train and mentor junior kitchen staff in proper butchering techniques and meat preparation.
- Uphold the highest levels of food safety and hygiene standards within the butchery area.
Requirements - Minimum of 3 years of experience as a Chef De Partie or similar role specializing in butchery.
- Culinary school diploma or relevant qualifications in butchery and meat preparation.
- Proven experience in high-end or luxury establishments is preferred.
- Strong knowledge of various butchering techniques and cuts of meat.
- Ability to work efficiently in a fast-paced environment with high attention to detail.
- Excellent organizational and time management skills.
- Flexibility to work varied shifts including weekends and holidays.
