As a Hygiene Manager you will be in charge of maintaining and upgrading sanitation and hygiene standards to ensure that all food given to guests and staff is free of microbiological chemical and physical contamination and that all work environments meet mandated Hygiene and Sanitation levels.
- Propose and maintain minimum requirements in all workspaces stores receiving and waste disposal areas to ensure that needed hygiene standards are adhered to at all times.
- Responsible for the effective and efficient maintenance of documents related to the Hotels sanitation and hygiene efforts/program.
- Continually liaises with external agencies (labs government agencies etc.) on sanitary matters
- To manage the segregation storage and timely removal of all waste recycles hazardous and confidential waste streams
- Sensitize the team on all Accor hygiene standards
- Conducts regular inspection of food receiving preparation storage and service areas to identify and correct any food safety and hygiene issues
- Carry out internal food safety audits reports all findings and follow up actions to be taken to ensure closure of issues
- Continuously monitor evaluate and improve the policies and procedures of the food safety management system
- Ensures that all hygiene monitoring records are completed by the food handlers as required by the corporate standards
- Ensures that appropriate food sampling and swabbing are undertaken at the required frequency
- Conducts supplier audits meetings and trainings on a regular basis in coordination with Purchasing Cost Control Culinary and F&B
- Liaise with all external food safety / HACCP auditors to ensure that all audit logistics and requirements are satisfied
- Liaise with the chemical services provider to ensure that safe chemical handling and breakage control cleaning & sanitation procedures are effectively implemented
- Liaise with the laboratory services provider to ensure that all mandatory food water ice and swab testing are conducted as per agreed schedule
Qualifications :
- Has good working knowledge in GMP GHP HACCP Food Safety
- Relevant certifications are preferred
- Minimum of 1 year experience in food safety quality assurance or relevant experience in Hospitality industry.
- Team player who is able to work independently and with minimum supervision
