Stewarding Operations
- Oversee all stewarding areas including dishwashing pot washing and kitchen cleaning schedules
- Ensure cleaning routines and sanitation standards are consistently maintained across all kitchens
- Monitor the maintenance and performance of stewarding equipment working closely with Engineering for preventive upkeep
- Manage the stewarding teams daily duties rosters and training needs
- Monitor and control breakage chemical usage and inventory of cleaning supplies
Hygiene Management & Compliance
- Implement and monitor HACCP guidelines and ensure full compliance with local health regulations
- Conduct regular hygiene audits across kitchen storage and back-of-house areas
- Train all culinary and stewarding staff on hygiene standards and food safety procedures
- Lead external inspections and coordinate corrective actions as needed
- Maintain up-to-date records of sanitation logs temperature checks and pest control activities
- Implement and enforce safety protocols in the stewarding side Fire & Chemical related.
Qualifications :
Degree or diploma in Hospitality Management Environmental Health Food Science or related field (preferred).
Minimum 35 years of relevant experience in stewarding and hygiene with at least 12 years in a supervisory or managerial role.
In-depth knowledge of HACCP principles kitchen sanitation and food safety standards in compliance with local and international regulations.
Certified in:
PIC Level 3 (Person in Charge Dubai Municipality requirement)
HACCP Certification (Hazard Analysis and Critical Control Points)
ISO 22000 Food Safety Management Systems
Level 4 Food Safety & Hygiene (Advanced) preferred for managerial positions
NEBOSH or OSHA (for health & safety awareness optional but advantageous)
can do in-house BFS training and certify team members
Experience in conducting hygiene audits risk assessments and training team members on food safety protocols.
Strong leadership communication and organizational skills with a proactive and detail-oriented mindset.
