Job Summary
The Tawa / Parotta Master will be responsible for preparing high-quality Tawa items Parotta varieties and other flatbreads as per the restaurants standards. The role requires strong expertise in dough handling consistency in taste and texture and the ability to work efficiently in a fast-paced kitchen environment.
Prepare different varieties of Parotta (Layered Malabar Coin etc.) and Tawa items with consistent quality.
Knead roll stretch and cook dough to ensure softness layers and proper texture.
Maintain hygiene standards and follow food safety guidelines at all times.
Ensure timely preparation of items during peak hours without compromising quality.
Coordinate with kitchen staff to manage orders and serve fresh hot items.
Monitor ingredient levels and report shortages to the kitchen supervisor.
Maintain cleanliness of the workstation cooking equipment and storage areas.
Follow portion control cooking standards and restaurant recipes.
Assist in training junior kitchen helpers on basic dough preparation.
Ensure minimal wastage and effective use of ingredients.
Minimum 3 years of hands-on experience as a Parotta Maker / Tawa Master.
Strong knowledge of South Indian flatbreads and Tawa-based dishes.
Understanding of food hygiene safety and cleanliness standards.
Ability to work in a high-volume kitchen environment.
Physically fit able to stand for long hours and work under heat.
Expertise in dough preparation layering stretching and shaping.
Speed and accuracy while preparing Parotta varieties.
Consistency in taste softness and quality.
Ability to multitask and manage peak-hour rush.
Strong teamwork communication and coordination skills.
