Responsible to work closely with the restaurant on various operational and cost-related issues
• Prepare the costing for recipes and menus prepared by the Head Chef and suggest the selling price
• Perform test checking on the receiving of goods at the restaurant to ensure that the procedures are followed correctly
• Prepare daily flash report of food costs and verify daily outlet void control sheets
• Review the menus on an ongoing basis and update to ensure costs are optimized and profits are maximized without compromising the quality
• Responsible for the month-end inventory of all operating outlets and the central kitchen
