The Assistant Chief Steward at Waldorf Astoria Dubai International Financial Centre leads and supports the stewarding team ensuring impeccable cleanliness equipment handling hygiene and safety standards. As part of a Forbes Five-Star luxury property this role helps deliver an exceptional guest experience that reflects the prestige and excellence of the Waldorf Astoria brand.

What will I be doing

As Assistant Chief Steward at Waldorf Astoria Dubai International Financial Centre you will train support and motivate the Back of House team to deliver an exceptional Guest and Member experience. You will ensure smooth and efficient stewarding operations maintain a clean and organized back-of-house provide outlets and banquets with properly functioning equipment and adhere to health and safety guidelines. Specifically you will be responsible for performing the following tasks to the highest standards:

  • Lead the Stewarding Department by providing courteous professional efficient and flexible service at all times.

  • Assign responsibilities to Stewarding Supervisors and Team Members in line with business requirements.

  • Maintain a hands-on presence in the operation especially during busy periods ensuring standards are met.

  • Ensure breakages food waste and general losses are controlled providing feedback to the operation and implementing measures to reduce them.

  • Adhere to operating expenses budgets and payroll controls utilizing part-time Team Members effectively.

  • Build and maintain a pool of qualified business partner Team Members in coordination with the Executive Chef HR and Purchasing.

  • Participate in the formulation of the Annual Operating Budget including operating costs equipment and FF&E requirements.

  • Lead train and demonstrate all duties to Team Members to ensure alignment with Waldorf Astoria & Forbes standards.

  • Implement flexible schedules and weekly rosters based on business patterns to ensure adequate coverage.

  • Establish and maintain inventories par stocks and proper storage of operating equipment F&D items and FF&E. Conduct daily and quarterly inventory checks.

  • Control requisitioning storage and careful use of all operating equipment and supplies.

  • Conduct daily pre-shift briefings and liaise with Kitchen and Food & Drinks teams on operations and quality control.

  • Ensure all outlets and food production areas are supplied with clean and dry operating equipment and kitchen utensils.

  • Monitor all Food & Beverage equipment needs coordinating with sister hotels or other properties as needed.

  • Maintain Departmental Standard Operations Manuals and the Daily Log Sheet ensuring they are updated annually.

  • Submit Team Member incident reports and manage Lost & Found items according to Policy & Procedures.

  • Coordinate repair and maintenance requests to ensure proper upkeep of the operation.

  • Supervise the use and consumption of all stewarding chemicals and ensure Team Members follow safety guidelines while using machinery.

  • Identify training needs plan programs and evaluate performance of Stewarding Team Members.

  • Exercise quality control portion control and wastage minimization; control food cost through accurate requisitioning.

  • Monitor and drive daily food waste data manually or via the WINNOW digital system.

  • Participate in ESG initiatives supporting Sustainability and HACCP communities and achieving audit targets.

  • Manage manpower planning to optimize cost while maintaining operational excellence.

  • Exercise quality control and portion control measures as well as wastage minimisation.
