Requirements
Key Responsibilities:
Menu Development:
- Create design and innovate new pastry and dessert offerings in alignment with the restaurant s or hotel s theme and guest preferences.
- Collaborate with the executive chef on seasonal and special event menus.
Operations Management:
- Oversee daily operations of the pastry kitchen ensuring highquality production of pastries cakes and desserts.
- Manage inventory ensuring the timely procurement of ingredients and supplies while controlling costs.
Team Leadership:
- Supervise train and motivate the pastry team to ensure consistent standards of preparation and presentation.
- Schedule shifts and manage team performance ensuring smooth workflow and a productive work environment.
Quality Control & Consistency:
- Ensure all pastries and baked goods meet the highest standards of quality and presentation.
- Maintain consistency in taste texture and appearance across all products.
Health & Safety Compliance:
- Implement and enforce food hygiene and safety standards as per UAE regulations.
- Ensure the kitchen is clean organized and compliant with all HACCP and municipality guidelines.
Cost Control:
- Monitor food costs and implement strategies to reduce waste.
- Optimize use of ingredients and resources to maintain costeffectiveness.
Client Relations:
- Engage with guests and customers to understand preferences and gather feedback to improve offerings.
- Collaborate with event and banquet teams to deliver custom desserts for special events.
Innovation & Trends:
- Stay updated with the latest pastry trends and techniques bringing creativity and fresh ideas to the menu.
- Experiment with new ingredients methods and presentations to set the business apart from competitors.
Qualifications:
- Proven experience as a Head Pastry Chef or Pastry Sous Chef in a luxury hotel fine dining restaurant or bakery.
- Formal culinary education with a focus on pastry arts.
- Expertise in a variety of baking techniques including chocolates confectionery sugar work and cake decorating.
- Strong leadership and organizational skills with the ability to manage a diverse team.
- Excellent communication and time management skills.
- Ability to work under pressure and maintain composure in a fastpaced environment.
- Knowledge of UAE food safety regulations is an advantage.
Preferred Languages:
English (mandatory) Arabic (preferred) additional languages are a plus.
