ملخص الوظيفة

Every memorable dining experience at Fairmont Hotels and Resorts begins behind the scenes with our Culinary teams commitment to safe efficient operations and exceptional cuisine. As Commis 1 the care you devote to all aspects of food preparation will result in the creation of truly spectacular fare. 

Key Responsibilities

  • Prepare cold dishes such as salads dressings appetizers cold starters and buffet items according to standard recipes.
  • Assist in daily mise-en-place to ensure smooth kitchen operations.
  • Ensure consistency in taste quality and presentation of all cold kitchen items.
  • Maintain cleanliness and organization of the cold kitchen section in compliance with HACCP standards.
  • Store food items correctly ensuring proper labeling dating and rotation (FIFO).
  • Monitor food quality and freshness reporting any issues to the Chef de Partie.
  • Assist with buffet setup replenishment and breakdown as required.
  • Support Commis and Demi Chefs within the section when needed.
  • Follow all health safety and food hygiene regulations.

Qualifications :

  • Diploma or certificate in Culinary Arts or equivalent.
  • Minimum 12 years of experience in a cold kitchen or garde manger section.
  • Knowledge of cold food preparation plating and basic carving techniques.
  • Strong attention to detail and presentation standards.
  • Ability to work efficiently in a fast-paced environment.
  • Good teamwork and communication skills.
  • Flexibility to work shifts weekends and public holidays.

Physical Requirements

  • Ability to stand for extended periods.
  • Comfortable working in cold storage and busy kitchen environments.
