• Manage all Food and Beverage Outlet operations
• Maintain exceptional levels of customer service
• Train and retain, supervise and schedule food and beverage staff in accordance with business needs, productivity, service standards and Hilton Hotels policies and procedures
• Develop menus and food and beverage marketing strategies, implement new menus and promotions, such as holiday and special event promotions
• Observe food and beverage outlet operations and take needed action to ensure all standards are being met, test food and beverage products for consistency
• Respond to guest inquiries and coordinate special arrangements and requests in food and beverage outlets
• Assist outlet managers and asst. FB managers in coordinating services from other departments
• Ensure compliance of brand standards
• Utilize computer equipment to analyze forecast, cost, and revenue reports and make decisions based on that information to ensure profit maximization
• Recruit, manage, train and develop the Food and Beverage team
• Manage guest queries in a timely and efficient manner
• Work within budgeted guidelines in relation to Food, Liquor Costs and Payroll
• Set departmental targets and objectives, work schedules, budgets, and policies and procedures
• Develop menus with other members of Food and Beverage team
• Accountable for monthly stock takes
• Incentivise team members to maximize sales and revenue
• Carry out annual and mid-year appraisals with Managers under your responsibility
